The Delicate One

In the glass, the wine is a strong yet light orange. One very light filtration pass ensures an incomparably vivid taste. The nose reveals a fine Earl Grey aroma as well as the scent of hibiscus and meadow hay. These fresh, herbal notes on the palate, paired with the concentrated, well-integrated tannins, make it an excellent accompaniment to food.

Vinification
Harvested early in the morning the grapes are additionally cooled to preserve natural freshness and avoid any oxidation. Gentle whole-bunch pressing is followed by a spontaneous, temperature-controlled fermentation in stainlesssteel tanks with indigenous vineyard yeasts, building more aromatic complexity. A partial malolactic fermentation (10%) rounds the wine out harmoniously.
Food and Wine Pairing
Light, fresh, sun-kissed
By the pool or at the table, this Blanc de Noirs pairs well with light yet flavorful cuisine. It goes very well with grilled pumpkin, zucchini or fennel with lemon oil and herbs, fresh goat cheese or burrata with tomatoes and roasted almonds. It also brings out its lively character with pasta and seafood dishes, such as spaghetti alle vongole or linguine with shrimp. And if you want to keep it simple, a plate of olives, almonds, and good bread will do.
