About the Terroir
Vinification
The wines we use for our Rose Pétillant have been carefully selected in our cellar. A low acidity and a broad and varied range of aromas, which we find above all in our rosé wines, are important for dealcoholization. It is also an advantage if the wines contain few sulphites. During dealcoholization, the alcohol is removed from the original rosé under vacuum. The temperature of the wine remains virtually unchanged. The sensitive ingredients are retained and the valuable, elegant and subtle color of the wine is preserved. Natural carbon dioxide is added in a further gentle process. As this drink is legally marketed as a foodstuff and no longer as a wine, it must be labeled with a best-before date and a nutritional table.
